Yuhuatai Restaurant is an old restaurant in Beijing that sells Jiangsu Huaiyang cuisine. It was built in Bamiancao at the north entrance of Wangfujing in early 1921. After several twists and turns, it is now located in Yuzhongxili, Madian, Xicheng. The name of Yuhuatai comes from the name of a Yangzhou tower, which was built after the banquet when Emperor Yang of Sui went to Yangzhou. When Yuhuatai was first built, its business was very good, and "the annual turnover could reach 100,000 gold in peak times." Mr. Zhang Daqian, a famous Chinese painting master, once painted a "Spring Duck" for Yuhuatai as a gift, and Mr. Pujie, the younger brother of the last emperor of the Qing Dynasty, Puyi, wrote a plaque specifically for Yuhuatai. Yuhuatai's dishes are good because of its strong technical strength and many famous chefs. Several masters of Huaiyang cuisine who were in charge of the kitchen affairs at Yuhuatai were highly valued. Some were transferred to Beijing Hotel and the State Council as chefs, serving the prime minister and the marshal, and some even became Mr. Mei Lanfang's family chefs. Today, Yuhuatai Restaurant inherits the tradition and is good at making fish, shrimp and crab dishes. The dishes are carefully selected, the skills are applied according to the materials, the main ingredients are highlighted, the soup is exquisitely made, and there are dishes for all seasons. Famous and excellent special dishes include chicken fire boiled dried shreds, stir-fried tiger tail, squirrel fish, braised three whites, fragrant peach pigeon eggs, pipa prawns, eight-treasure chicken, dry-fried crucian carp, crab roe shark fin, etc. Noodle varieties include Huaiyang soup dumplings, glutinous rice steamed buns, Yangzhou pot noodles, etc. In 1990, Yuhuatai Restaurant developed and launched the "full eel banquet", which won the Beijing catering industry science and technology progress award. The "full eel banquet" hosted by Huaiyang cuisine master Zhang Fuyi has 33 hot dishes. There are oolong lying snow, lychee green eel, crab box green eel, spicy green eel, pen eel, etc. In addition to Huaiyang flavor dishes, Yuhuatai also operates home-cooked dishes with northern and southern flavors.
