Yapu winemaking is a traditional skill project in the fourth batch of representative projects of Changzhou's municipal intangible cultural heritage. Yapu winemaking was founded in the 28th year of Emperor Guangxu's reign in the Qing Dynasty (1902) by Lu Hongsheng, the tenth grandson of Lu Wanxue, the Minister of War during the Chongzhen period of the Ming Dynasty. In 1929, Lu Fuquan founded the Yapu Zaofang. In 1980, Lu Dixing established the Xueyan Yapu Winery in Wujin County. Yapu rice wine is made from local japonica rice, wheat and drinking water from Zhushan Lake as the main raw materials, and the juice of the young leaves of the black rice tree from Zhushan. It is brewed through more than 30 processes such as three-time feeding cycle fermentation, pressing, filtering, decocting, sealing, and storage. The finished product is amber in color, without any pigment, fragrant, mild in nature, and belongs to the semi-sweet type of rice wine. The alcohol content is lower than that of Shaoxing rice wine, and the nutritional value is high. It is a fine rice wine suitable for all ages. According to the "Yanghu Hezhi", "It is said that King Helu of Wu escaped the summer heat here." It is said that King Helu of Wu once built a summer palace in Maji Mountain. There is a Wugong Well in the summer palace. The spring water is sweet and never dries up all year round. After the autumn rice harvest every year, the villagers of Yapu rowed to the Wugong Well to fetch water to make their own wine. The wine they brewed is sweet and mellow with amber color. This wine comes from the ancient village of Yapu Village, so it is named "Yapu Wine". Yapu yellow wine used to be brewed by hand, and the control of each link depends entirely on the brewing master. If you are not careful, the color and taste of the wine will change. Every year, brewing begins in late autumn to early winter. The pre-fermentation takes seven days and seven nights, and people have to watch the whole process. In order to make the saccharification and fermentation uniform and control the fermentation temperature, it is necessary to start rake and stir in time, and not miss a moment. In order to pass on and protect the skills, since 2014, the Yapu brewing skills have been protected by the century-old Changzhou Yapu Brewing Co., Ltd., which now has a brewing production base of more than 20,000 square meters, total assets of more than 30 million, and an annual output of more than 5,000 kiloliters of rice wine and 500 kiloliters of white wine. The company has more than 100 employees, including one senior engineer, two senior brewers, one representative inheritor at the municipal and district levels, two intermediate inspectors, and one intermediate accountant. The company mainly produces and sells two brands, Yapu Yellow Wine and Zhushan Lake Yellow Wine. Over the years, the "Yapu" brand has also been awarded the honorary titles of "Famous and High-quality Products of Jiangsu Province", "Famous and High-quality Agricultural Products of Changzhou City", "Famous Brand Products of Changzhou City", "Well-known Trademarks of Changzhou City", "Leading Enterprise of Industrialization of Changzhou City", "Time-honored Brand of Changzhou City", etc. The company has passed SC quality and safety certification and ISO9001:2008 international quality system certification, and the protection and inheritance are in good condition.
