Changzhou rice wine brewing skills, a traditional skills project in the fourth batch of representative projects of Changzhou's municipal intangible cultural heritage. Changzhou rice wine, also known as Hao's rice wine, is a local rice wine brand in Changzhou. The word "Hao's" is taken from the Changzhou dialect "Hao's" and the brand is integrated with Changzhou's characteristics and cultural history. The historical origin of Changzhou rice wine can be traced back to the Guangxu period of the Qing Dynasty. In 1912, a "Pan's Wine Shop" was founded in Anjia Town. Cai Quanrong, the founder of Hao's rice wine, bought the shop and started a workshop-style wine business. Later, the second-generation heir Cai Shungen renamed it "Shuntai Zaofang". At that time, local literati and scholars all rushed to patronize Shuntai Zaofang. The fine wine used for offering at the temple fair every year must be the special wine of Shuntai Zaofang. Cai Shungen not only supplies fine wine for temple fair activities, but is also the organizer and leader of temple fair activities recommended by the masses. Until around the liberation, the third-generation heir Cai Linyuan's Yuanxing Wine Shop was also well-known. Ordinary people would come to Yuanxing Wine Shop for weddings, house building, birthday celebrations and other wedding banquets. At the end of each year, people would rush to Yuanxing Wine Shop to buy wine in preparation for the New Year to entertain relatives. The rice wine brewed by Cai Linyuan was always in short supply. From Cai Quanrong and Cai Shungen's "Shuntai Zaofang", to Cai Linyuan's "Yuanxing Wine Shop", to Cai Wenzhong and Cai Yu's "Changzhou Haohao Wine Industry", five generations of the Cai family made, tasted and sold wine, made wine their business, and accompanied wine, integrating the character of people with the character of wine. The rich and elegant, fresh and mellow flavor of Haohao Yellow Wine has created a wonderful relationship between Haohao Yellow Wine and the people of Changzhou. The unique packaging design has been unanimously loved and recognized by the public. In the traditional brewing method, a good jar of yellow wine needs to be mixed and fermented with rice, wheat, koji, water and other raw materials, and then steamed, pressed, drained and other processes before it can be delivered to customers for enjoyment. In recent years, Changzhou's good yellow wine has gradually combined modern technology with traditional craftsmanship, scientifically controlling every link, making the finished product more fragrant and attractive. Cai Wenzhong, the fourth-generation inheritor of Changzhou yellow wine, also absorbed the production skills of "Shilongzui" yellow wine from Changzhou Brewing General Factory. On the basis of the original bagged wolfberry yellow wine of "Shilongzui", he developed more than 20 brands of Shilongzui refreshing series of yellow wine, with annual sales of 15,000 tons, making Shilongzui a well-known trademark with a far-reaching reputation. In 2010, Cai Wenzhong and his wife "visited Mr. Dale Kang, the inheritor of Shaoxing yellow wine, three times" to invite him to their company for exchanges and discussions, in order to implement the ambition of brewing Changzhou's good yellow wine into "the best yellow wine in the world".
