Defachang Dumpling Restaurant is located in the northwest of the Bell Tower in Xi'an. It was founded in 1935 by Zhao Jiwu, a businessman from Baoding, Hebei, who hired a famous cooking technician. The current business area is 8,700 square meters, with 390 employees, including 76 technicians. It mainly sells dumpling banquets and Beijing-style dumplings. Defachang dumplings are made with strict ingredients, finely crafted, with sufficient stuffing and thin skin, and a mellow and delicious taste. The key to the secret lies in the stuffing: first, fresh beef is added to the pork stuffing, which is fat but not greasy and tender. Second, old ginger is used to take its spicy flavor. Third, the stuffing is added several times to make the seasoning so that the minced meat can fully absorb it, making it both soft and cohesive. The dumpling banquet integrates cooking technology and modeling art. "One dumpling has one shape, and hundreds of dumplings have hundreds of flavors." There are more than 200 varieties. The three characters "Defachang" were named by Zhao Jiwu. The plaque at the gate was written by Governor Zhao Boping after the liberation of Xi'an in 1949. In the process of management, Zhao Jiwu took morality as his purpose and chose people by trust. No matter how the prices in the market soar, they always insist on the unique flavor of dumplings and guarantee the quality of dumplings. The store pays attention to the word "virtue", prays for the word "prosperity", and hopes for the word "long". Despite many changes, it has always been prosperous. After dining in this store, the poet He Jingzhi happily left a message: "Feasting for literature, feasting for friends, and feasting for dumplings, I will always remember Chang'an's virtue and longevity."
