In 1984, the famous pastry chef Zhang Xingshou was hired as a technical consultant to form a dumpling banquet research group. They visited all parts of the country, learned from the strengths of many schools, consulted the court recipes of past dynasties, collected folk information, and created 108 kinds of dumplings with different fillings, flavors, and shapes. They launched a dumpling banquet with hundreds of dumplings, hundreds of flavors, and one dumpling in one shape, which was hailed as "the only one in China". In 1987, a branch was set up in Hangzhou, and the palace dumpling banquet was participated in the Great China Exhibition held by the Seibu Department Store Foundation in Tokyo, Japan. Subsequently, the China Xi'an Yangxi Hotel was opened in Tokyo, making the delicious fragrance of Xi'an spread to the East. (No pictures yet, welcome to provide.)
