Later, Huangshan Dried Tofu Factory and Pingjiang Food Factory were established through public-private partnership. In 1958, they were merged into Guanqian Pickle Factory. In 1964, they were renamed Suzhou Food Factory. At the end of 1999, they were restructured into Suzhou Jinjin Food Co., Ltd. The marinated dried tofu with rich marinade is carefully made using traditional techniques. During processing, not only the water content of the white embryo must be moderate to ensure the boiling of the oil slices, but also the thickness of the white embryo must be uniform and the shape of the blocks must be neat after being cut into small pieces. The recipe and cooking are also very particular. During the cooking process, they must be constantly stirred to ensure that the oil slices are evenly absorbed by the marinade. During the cooling process after being taken out of the pot, they must also be constantly stirred to ensure that all the marinade is absorbed by the finished product, forming a magical effect of a delicious taste and a bright appearance. The marinated dried tofu was first sold by stringing pieces of dried tofu with bamboo sticks, and later it was changed to multi-layer paper bags and paper boxes. With the continuous improvement of packaging materials, the current vacuum packaging has greatly extended the shelf life of marinated dried tofu, from one or two days in the past to six months. The product forms also range from bamboo skewers, spicy paper bags, paper boxes, to later composite packaging, gift box packaging and dozens of other specifications and varieties. When the delicious and fragrant juice seeps out from the loose gaps in the marinated dried tofu, the taste buds experience an incomparable magical experience.
