The dried tofu made by Zhaojia Tofu Shop is a traditional specialty of Jinze. It originated in 1894 (the fourth year of Guangxu in the Qing Dynasty) and developed in the early years of the Republic of China. It has a history of more than 100 years. In the process of development of Zhaojia Tofu Production Techniques passed down from generation to generation, the ancestral secret recipe, strict material selection, precise time control and continuous technical improvement were used to make it "tight and delicate meat, soft and tough bite, fresh and fragrant aftertaste for a long time" and become a famous and excellent product of Qingpu. It has been sold to more than 100 sales points in Jiangsu, Zhejiang and Shanghai for a long time. During the Republic of China period, there were more than ten tofu shops in Jinze Ancient Town, including Ni Yongxing, Bei Tongxing, Nan Tongxing, Bei Nanxing, Nan Nanxing, Luo Zhengtai, Sun Fuji and Shen Enji, but Zhaojia Tofu Shop was particularly outstanding. Before and after liberation, there were hundreds of tofu shops in the Jiangnan water town, and Zhaojia Tofu Shop was the most famous one, which was outstanding. The exquisite craftsmanship of Zhaojia Tofu Shop once attracted many peers to come and exchange and learn, and its influence was very wide. The craftsmanship spread to the surrounding areas such as Zhouzhuang, Xitang, Luxu, Fengjing and other ancient water towns.
