The craft of making Su Zao meat is an intangible cultural heritage project at the Fangshan District level. It is the most representative of the Su Zao dishes in the imperial court during the reign of Emperor Qianlong of the Qing Dynasty. It is said that this dish comes from Zhang Dongguan, a famous chef in Suzhou during the reign of Emperor Qianlong. Su Zao meat is a dish independently developed by Zhang Dongguan inspired by Suzhou braised pork. Zhang Dongguan served Emperor Qianlong for 19 years before retiring to his hometown. After the reign of Emperor Qianlong, "Su Zao dishes" declined in the palace. In the late Qing Dynasty, a master of making and selling "Su Zao meat" appeared among the people. Sun Zhenbiao, a Manchu, was originally named Kexing'a. He was born in the 11th year of Emperor Guangxu (1885). His grandfather and uncle both worked in the imperial kitchen. The secret recipe of making "Su Zao meat" was passed down from his family. From the 28th year of Emperor Guangxu to the 13th year of the Republic of China (1924), Sun Zhenbiao sold "Su Zao meat" on the west side of the corridor at the intersection outside Donghuamen. Mr. Sun Zhenbiao died in 1961 and passed the ancient recipe to his children and grandchildren. Sun Zhenbiao's daughter-in-law Li Zengxia and her descendants are not proficient in the production process of Suzhou meat. Hou Shengyong, a good friend of Li Zengxia's son Sun Jingzhong, is the legal person of the "Lao Hou Shaobing" chain store who loves the traditional food of old Beijing. In 2015, with the consent of Li Zengxia, Sun Jingzhong donated the "Secret Recipe for Suzhou Meat" to Hou Shengyong free of charge. Mr. Hou invited Bai Changji, a national cooking master and inheritor of the intangible cultural heritage of Suiyuan official cuisine, and Feng Huaishen, a national pastry master and inheritor of the imperial court cuisine, to carefully develop "Suzhou meat" according to the methods and materials recorded in the secret recipe. The secret recipe records the iconic characteristics of "Suzhou meat": "Selected high-quality pork belly, first sauce and then stewed. The meat slices are wide and long, fresh and tender, fat but not greasy, lean but not dry, crispy and tender in the mouth, thick marinade, floating oil in the soup, and slightly sweet in the mouth." The restored "Suzhou meat" is the same as the above in terms of taste, color, quality and taste. Nowadays, Suzhou meat is no longer mysterious. While tasting this palace delicacy, people are also tasting the exquisite palace food culture, history, life and art.
