Fuchun
Fuchun Tea House of Yangzhou Service Company is a well-known old shop. It was founded as Fuchun Flower Bureau in 1885 and started as a teahouse. After a hundred years, it has formed the characteristics of flowers, tea, snacks, dishes, color, fragrance, taste, shape, leisure, quietness, elegance and appropriateness. It is the authentic representative of Weiyang ordering dishes. The traditional famous snack of Fuchun Tea House, Sanding Bao, was rated as a famous food and won the Golden Tripod Award for Quality Products of the Ministry of Commerce. Thousand Layer Oil Cake and Jade Shaomai are known as "Yangzhou's Two Wonders". Shepherd's Purse Bun, Shredded Radish Crisp Cake, Crab Roe Bun, Wild Duck Cabbage Bun and other famous snacks vary from season to season, and are delicious and varied. Chicken soup noodles, various stewed noodles, fried noodles, have a strong flavor. Various crispy snacks, steamed dumplings, seasonal snacks and powdered snacks are even more varied and taste different. Fuchun cuisine is known for its light and elegant taste. The famous dishes such as boiled dried shredded pork, crystal pork trotter, spring bamboo shoots and braised silver carp, stewed crab meat and lion head, sweet and sour mandarin fish, and stewed silver carp head are all timeless and unique in flavor. In order to meet the needs of different levels, Fuchun Tea House has recently introduced new seasonings, added some new cooking methods, selected low-gluten special rich flour, and adopted new yeast fermentation technology, so that Fuchun dishes can be taken to a higher level on the original basis. In the late 1950s, Master Zhang Guangqing, a famous teacher of Fuchun Tea House, was specially invited to Shanghai to make Fuchun dumplings for Chairman Mao, who was attending the Seventh Plenary Session of the Eighth Central Committee in Shanghai. Chairman Liu Shaoqi and Vice Chairman Ye Fei also tasted Fuchun dumplings when they came to Yangzhou. Many well-known people in China, such as Zeng Tao, Ba Jin, Zhao Dan, Qian Weichang, Zhao Yanxia, Wu Baitao, etc., have come to Fuchun, and their exquisite pastry skills have been highly praised by them. Fuchun Tea House has many famous teachers and strong technical force, and has many of the best pastry chefs and top chefs in the country. In 1988, Fuchun Dim Sum went to Japan and opened the "China Fuchun Tea House" in Tokyo. Fuchun buns are very popular in Ikebukuro and Ginza, Tokyo. In recent years, Fuchun Tea House has been renovated to meet the needs of guests at home and abroad. After the completion of the "Chunjiang" and "Zuiyue" restaurants, the "Huaiyang First Building" integrates the traditional Chinese classical pavilion architectural art and modern decoration, and is embellished with fresh and elegant rockery and fountains. The mahogany tables and chairs and lacquer tables and chairs in the restaurant are antique, comfortable and elegant. The flower bonsai in the building are competing for beauty.
