Changzhou tofu soup making skills, a traditional skills project in the fourth batch of representative projects of Changzhou's municipal intangible cultural heritage. According to legend, since the city was built in the first year of Jingfu in the Tang Dynasty, many dignitaries and common people in the city have liked to eat soy products, especially tofu soup. Because tofu soup has a special taste and rich nutrition, it tastes especially good when eaten with fried dough sticks and cakes. Due to its unique way of eating, it has become a special snack in Changzhou and has been passed down to this day. Early tofu soup evolved from tofu pudding. During the Qing Dynasty and the Republic of China, tofu soup was carried on a pole and sold along the street. In front of the pole was a rectangular wooden box with a copper pot in the middle and a small stove underneath for heat preservation. Tofu pudding is served in a soup bowl with a copper spoon, and seasonings such as soy sauce, sesame oil, shredded bean curd, dried shrimp, and mustard are added. It is cooked and eaten immediately. The traditional production method and process of Changzhou tofu soup are as follows: select soybeans, soak for more than 5 hours, remove the beans and grind them into fine pulp, stir well and filter out the bean dregs to make soy milk. After boiling and cooling, add a coagulant to make tofu pudding. Use a large pot to make tofu pudding into soup, add bean curd cake, duck blood, egg skin shreds, egg white, and bean curd shreds, and add coriander, mustard tuber, dried shrimp, preserved egg diced, and seasonings when serving in a bowl. The reason why Changzhou tofu soup tastes fresh is that the broth of old hens (local chickens) is added to make the original soup, and then cooked. The finished tofu soup is refreshing, the salted tofu is white and tender, the duck blood is smooth and tender without duck smell, the bean curd cake is not mushy or melted, the soup is not greasy or soupy, and the bean curd shreds are added, with a few green corianders floating, which is salty and delicious. Because it is a vegetarian food, it has become the first choice for people who like to eat vegetarian or vegetarian food, and because of the combination of different seasonings, the taste of vegetarian meat is almost indistinguishable from the real thing. "A bowl of tofu soup with a piece of cake" has become a delicious meal that Changzhou people love. In the development of Changzhou tofu soup making skills, many vivid and interesting folk stories have been derived, reflecting the development and changes of ancient and modern Changzhou folk culture and Jiangnan food culture, and it has unique folk research value. Foreign friends working in Changzhou love Changzhou famous snacks. The unique Changzhou tofu soup is quite representative and has become a medium for foreign friends to understand China and Changzhou. Traditional snacks have been strongly impacted by Western fast food, and the market share and coverage of tofu soup are relatively limited, and the number of shops and personnel making it has decreased. Due to changes in the production process of ingredients, the tofu, bean cakes, and duck blood used in tofu soup are not as pure as before. At present, Jiangsu Shuangguifang Catering Management Co., Ltd. has the best inheritance of Changzhou tofu soup making skills, becoming one of the top ten famous snacks in Changzhou and being rated as "Chinese famous snacks".
