Traditional noodle making technique (Lanzhou beef noodle making technique), a traditional technique of Lanzhou City, Gansu Province, is one of the national intangible cultural heritages. Lanzhou beef noodles have a refreshing soup, harmonious flavors, soft beef, long-lasting taste, and a variety of varieties. It is a unique local snack in Gansu. It was first created during the Guangxu period of the Qing Dynasty by the Hui elder Ma Baozi. Later, his third-generation grandson Ma Jiesan continued to innovate and developed into a clear soup beef noodle with one clear (clear soup), two white (white radish), three red (red chili oil), and four green (coriander, green garlic sprouts) color, fragrance, taste, and shape. It is said that Lanzhou beef noodles evolved from the "small car beef soup noodles" in Qinghua Town, Huaiqing Prefecture, Henan Province, and the authentic Lanzhou beef noodles were first created by Ma Baozi of the Dongxiang ethnic group in 1915. At that time, Ma Baozi's family was poor. Forced by life, he made hot pot beef noodles at home and carried them on his shoulders to sell along the streets in the city. Later, he added the soup from beef and sheep liver to beef noodles, which was fragrant. After that, he opened his own shop. In order to promote beef noodles, the waiter would immediately serve a bowl of hot beef soup to customers when they entered the door. This soup is clear in nature and refreshing, so Ma Baozi's clear beef noodles became famous. After that, Ma Baozi continued to study and improve the method of beef noodles. He and Chen Hesheng and others unified the production standards of beef noodles with "one clear, two white, three green, four red, and five yellow", and officially changed the name to "Lanzhou beef noodles". This noodle is widely circulated among the Hui, Dongxiang, Salar, Baoan and other ethnic groups in the northwest. In 1925, Ma Baozi's son Ma Jiesan took over the beef noodle restaurant. Ma Jiesan continued to work hard on the word "clear" and constantly improved beef noodles. It is famous at home and abroad for its tender meat, fresh soup and fine noodles. With the development of society, the business of Lanzhou beef noodles is getting bigger and bigger. Not only can beef noodle restaurants be seen everywhere in Lanzhou, but also "authentic Lanzhou beef noodle restaurants" can be seen all over the country. On July 2, 2010, the China Cuisine Association named Lanzhou, Gansu Province, the "Hometown of Chinese Beef Noodles". On May 24, 2021, the traditional noodle making technique (Lanzhou beef noodle making technique) was approved by the State Council to be included in the fifth batch of national intangible cultural heritage extension project list, with the heritage number: -160.
