Liyang is located in the southern part of Jiangsu Province and is known as the "Silk Palace Tea Town". The unique geological and climatic conditions provide an excellent environment for the growth of green tea. The history of tea planting in Liyang can be traced back to the Tang Dynasty more than a thousand years ago. After years of cultivation and production, Liyang tea farmers have created a number of nationally renowned green tea brands such as Nanshan Shoumei, Qianfeng Xuelian, Shahe Guiming, Shuixi Cuibai, and Tianmu Fangjin, and refined unique green tea production techniques, and accumulated a profound cultural and technical foundation for the production of Tianmu Lake White Tea (albino green tea). Nanshan Shoumei Lijiayuan Nanshan Tea Professional Cooperative adopts the famous tea production technique of frying and baking created and taught by Jiangsu tea expert Zhang Zhicheng. The picked fresh leaves are spread, withered, shaped, baked, and picked, forming the "Nanshan Shoumei" tea with the characteristics of "flat eyebrow shape, uniform hair, green color, high fragrance, and freshness". The taste is mellow and refreshing, the soup is clear and bright, and the leaves are tender and bright. It was rated as a national famous tea in 1989. Qianfeng Snow Lotus Qianfeng Snow Lotus Tea is made by Jiangsu Qianfeng Tea Co., Ltd. on the basis of the iron pan roasting of monks in Wuyuan Mountain, Liyang, using its tea buds as raw materials, and refined through processes such as roasting, rolling, rubbing, drying, and sorting. The tea is covered with white hairs and looks like snow flowers, so it is called "Snow Lotus". It was rated as a national famous tea in 1989, and Qianfeng Snow Lotus was included in the "Chinese Tea Classic" as a Chinese famous tea in 1990. Shahe Guiming Shahe Guiming is a famous tea produced by Professor Hua Guanbing of Zhejiang Supply and Marketing School in Guilin Tea Farm in the late 1970s and early 1980s based on the research and production techniques of Longjing tea. After processes such as cooling, roasting, sorting, shaping, pan-drying, drying, and refining, it has the characteristics of being flat and straight, green and bright, with lasting fragrance, fresh and mellow taste, clear and bright soup, and tender and even leaves. In 1992, it won the National Ministry of Agriculture Gold Award. Shahe Guiming is the representative of flat tea in Liyang City. The establishment of style characteristics laid the foundation for the style characteristics of Tianmu Lake White Tea. Shuixi Cuibai Shuixi Cuibai is a flat green tea created by Shuixi Tea Farm in 1985. The fresh leaves are processed through the process of spreading, killing green, rubbing, shaping, screening and cooling, and drying in a hot pot. It is fried into dry tea using 10 techniques such as pulling, rolling, grabbing, shaking, throwing, rubbing, pressing, grinding, spitting, and unraveling. The appearance is flat, green and emerald, and shaped like a cypress, which metaphorically means that the anti-Japanese martyrs of the New Fourth Army are like pine and cypress, evergreen; the internal quality is elegant and lasting, the soup is clear and bright, the taste is mellow and refreshing, and the bottom of the leaves is yellow-green, bright and tender. Since the 1990s, "Shuixi Cuibai" has won awards in famous tea competitions such as the "Lu Yu Cup" for many consecutive years. Jiang Weiqing, a veteran of the New Fourth Army and former secretary of the Jiangsu Provincial Committee of the Communist Party of China, happily wrote the name of the tea for "Shuixi Cuibai". Tianmu Fangjin "Tianmu Fangjin" tea originated from the "Fangjin" tea created by Zhijin, a Taoist priest named Zhou from Liyang, who visited Huangshan in the Northern Song Dynasty. It is developed and produced by Tianmu Mingju Tea and Fruit Ecological Park in Tianmu Lake. The fresh leaves are naturally cooled, withered, cooled naturally for the second time, and dried in a hot pot. The leaves are shaken, scattered, thrown, pressed, ground, grabbed, and spread to form a flat and straight tea with a mellow taste, lasting aroma, clear and bright soup color, and tender and even leaves.
