Yushan Green Tea Production Technique
Yushan Green Tea Making Skills is a traditional skill project in the fifth batch of representative projects of Suzhou Municipal Intangible Cultural Heritage. Yushan is located in Changshu, Suzhou, with the Yangtze River in the north and Shanghu Lake in the south. It has abundant rainfall and lush vegetation all year round. Tea trees were planted in Yushan during the Ming and Qing Dynasties. On the top of Yushan, there is a mountain with strange rocks and a shape like a blade and an axe. It is called Jianmen. The surrounding mountains are flat and full of tea trees. Because it faces the Bihu Lake and the air is pure, the tea trees grow tender buds around the "Guyu" every year. They are picked in time, roasted and fried with precision to produce high-quality green tea that is famous both at home and abroad, so it is also called Jianmen Green Tea. In addition, according to relevant records, during the Republic of China, tea trees were planted behind the Yushan Zushi Temple and at the foot of the mountains on both sides of Xingfu Temple, which was the earliest planting base of Yushan Green Tea. In 1960, after the establishment of Yushan Forest Farm, a special person was assigned to manage it. At present, Yushan Green Tea Co., Ltd. and Weimo Jianmen Green Tea Co., Ltd. specialize in planting, producing and selling authentic Yushan Green Tea. The tea gardens on Yushan are distributed around Jianmen and the foothills with an altitude of 10-80 meters. There are many varieties of tea trees, including "Longjing No. 43", "Wuniuzao", "Baicha", "Longjing", "Changye", etc. Due to the suitable environment, the tea tree buds are fat and the leaves are strong, and the whole is green. Yushan Green Tea is divided into two categories: special tea and stir-fried green tea, with a total of more than ten varieties. Among them, there are 8 special teas such as "Jianhao", "Minghao", "Yushan Biluochun", "Jianmen Biluochun", "Jin Biluo", and "Techao". The Biluochun tea produced by Yushan Forest Farm uses the "Yushan Brand" and "Jianmen Brand" trademarks. The main processes of Yushan Green Tea production are: killing green, rolling, rolling and drying. The entire production process is completed in the same pot. When frying, keep your hands on the tea and the tea in the pot. Knead and fry, knead and fry, combine frying and kneading, and operate continuously until the tea is ready. Representative varieties of Yushan green tea: 1. Yushan white tea, with a delicate and beautiful appearance, golden and green color, and a high and lasting tender fragrance. After brewing, the soup color is tender green and bright, the taste is fresh and refreshing, the bottom of the leaves is in a flower and restored to jade white, the veins are emerald green, and it is unique and elegant. 2. Jianmen white tea, the main feature of Jianmen Taibai tea is its silvery white color, which is known as the beauty of "green makeup and white wrapping". After brewing, it tastes fresh and delicious. 3. Biluochun tea, which originated in the Ming Dynasty, is a famous tea with a green soup color and curled like a snail. It has an excellent taste and has become a tribute tea. There are three characteristics when picking: one is picking early, the second is picking tenderly, and the third is picking cleanly. It is harvested around the spring equinox every year and ends around the grain rain. The quality of the pre-Qingming tea harvested from the spring equinox to Qingming is the best. Yushan Green Tea has distinct regional characteristics of Jiangnan Wu culture and is an indispensable part of traditional Chinese tea culture.
