Shuanggou Daqu Liquor is a traditional Luzhou-flavor distilled liquor produced in Shuanggou Town, Sihong County, Suqian City, Jiangsu Province. The town is located at the intersection of the Huaihe River and Hongze Lake. The air is warm, the grains are abundant, the water is clear and sweet, the soil is acidic yellow clay, and the microbial population is rich, which is very suitable for brewing. Shuanggou Daqu Liquor has exquisite traditional brewing techniques and more than 200 processes. High-quality wheat, barley, and peas are used as koji raw materials. The koji is manually stepped on, and the shape is like a brick, which is heavier than the koji blank arrangement, and the process is rigorous. High-quality red sorghum is used as the raw material for brewing, high-temperature Daqu is used as the saccharification and fermentation agent, and the underground mud-built old cellar is used as the fermentation container. The traditional "old five-甑" process of solid-state low-temperature slow long-term fermentation, continuous slag ingredients, mixed steaming and mixed burning, slow gas distillation, and quantitative and qualitative segmented wine picking follows the ten-point formula of "stable, accurate, fine, clean, uniform, transparent, appropriate, diligent, low, and strict", which makes Shuanggou Daqu Liquor have a unique style and distinct personality. The original liquor is graded, stored and aged, carefully blended, packaged, and shipped after passing the inspection. The brewing technique of Shuanggou Daqu Liquor has a long history, which flourished in the Sui and Tang Dynasties and prospered in the Ming and Qing Dynasties.
