my country has been good at brewing since ancient times and is one of the earliest countries in the world to master brewing technology. Chongzhou has a long history of brewing and is the production base of traditional Chinese liquor. As early as the Tang Dynasty, it was well-known. Du Fu traveled to Shuzhou (now Chongzhou) and left poems such as "Shu wine is strong and invincible" and "I always think of getting drunk". Lu You, an official in the Southern Song Dynasty, left a masterpiece of the ages: "Drinking in spring is like sweetness, and drunkenness is like a thousand wind and rain". In modern times, Yaolin wine is the most famous. It is the essence of historical brewing and is well-known in Sichuan and Bashu. The folk song says: "Yaolin wine, every family has it, and the lobby and government offices are connected." Today's Chongyang Wine Industry originated from Yaolin Shaofang during the Guangxu period of the Qing Dynasty. The original Shaofang wine cellar is now listed as a cultural relic protection unit in Chengdu. It is the only wine cellar listed as a cultural relic protection unit in Chengdu except for the Shuijingfang site. Chongzhou belongs to the subtropical humid climate zone, with mountains, hills and dams, rich resources, and unique conditions for the development of winemaking. The mild climate, abundant grains, and sweet water provide abundant raw materials and a good environment for winemaking. There are 12 towns in the territory, including Jixian (Yaolin), Luquan, Daoming, Wangchang, Jixie, and Baitou, which have rich re-accumulated yellow mud paddy soil, heavy in texture and strong in storage capacity, suitable for cellars. The water source is abundant, clear and transparent, containing a variety of trace elements, mellow and sweet. The local area and the neighboring Dayi are high-quality coal producing areas, with sufficient fuel, which has promoted the development of Chongzhou's winemaking industry. Chengdu is the logistics and consumption center city of Sichuan, and also a transportation hub in the southwest, providing convenient transportation conditions for the outward development of Chongzhou wine. Chongzhou has a long history of brewing wine. According to the "Chongqing County Chronicles" of Emperor Qianlong of the Qing Dynasty, when the King of Shu conquered the Western Regions, a wild man offered a pot of wine. The King threw himself into the river and ordered the three armies to drink together. They were all drunk, so it was named Weijiang. Indirect information can be found before the Jin and Han Dynasties. After the Tang and Song Dynasties, there are records in the literature. As early as the Tang Dynasty, it was well-known. Du Fu traveled to Shuzhou (now Chongzhou) and left poems such as "Shu wine is strong and invincible" and "I always think of being drunk". Lu You served as an official here in the Southern Song Dynasty and left a masterpiece that will last forever: "Drinking in spring is like sweet wine, and when I am drunk, I write thousands of poems about wind and rain." In modern times, Yaolin wine is the most famous. It is the essence of historical brewing and is well-known in Bashu. The folk song says: "Yaolin wine is available in every family, and the lobby and government offices are connected." In 1952, based on Yaolin Shaofang, 18 Shaofangs in the county were established to form Chongqing County State-owned Winery, which is the predecessor of today's Chongyang Wine Industry. After more than half a century of development, the company now has assets of over 100 million yuan and an ecological brewing industrial base of more than 100 acres.
