Traditional cooking techniques of Liao cuisine
The traditional cooking skills of Liao cuisine are a traditional skill that was approved by the State Council in 2014 and included in the fourth batch of national intangible cultural heritage list. Liao cuisine has a history of more than 3,000 years. It is a local cuisine created based on the ethnic characteristics, regional characteristics, dietary customs and cooking techniques of Liaoning. It is recognized by the world for its long history and skills. Today, Liao cuisine has become the first major cuisine in the country to become a national intangible cultural heritage project, which is an important milestone in the development of Liaoning's catering culture. Liaoning will establish a teaching team with Lumingchun as the main leader and representative inheritors of Liao cuisine's traditional cooking skills to pass on and promote Liao cuisine. The "traditional cooking skills of Liao cuisine" will be radiated to various cities in Liaoning, and 31 Liao cuisine training stores will be established. Representative inheritors of Liao cuisine will regularly go to various training stores in various provinces and cities to conduct guidance, demonstration and standardization of Liao cuisine activities. Establish a team for the inheritance and training of Liao cuisine and form a skill chain. On the same day, Liaoning catering companies also launched the "Integrity Management Behavior Initiative for Catering Companies that Love Hometown, Eat Liao Cuisine and Pass on Skills", jointly advocating honest management and giving full play to the power of everyone in the catering industry. In November 2019, the "List of National Intangible Cultural Heritage Representative Project Protection Units" was announced, and Shenyang Lumingchun Restaurant Co., Ltd. was qualified as a protection unit for the "Liao Cuisine Traditional Cooking Skills" project.
