The traditional production techniques of Longyan Xiebei tea can be traced back to the late Ming and early Qing dynasties, with a history of more than 300 years. Xiebei tea is a high mountain tea, belonging to the category of stir-fried green tea, which has to go through nine processes: cooling, killing, rolling, initial frying, cooling, re-frying, sieving and cooling, re-frying, sieving and cooling to dry, and the whole process takes about 4 hours.
