The barbecued pork and spare ribs cooked over open flames in Dachikan Village is a traditional local delicacy in Doumen. The processing technology of barbecued pork and spare ribs cooked over open flames in Dachikan originated from Zhao Ziqiang's grandfather Zhao Chida (i.e. Zhao Zuoxiu). It is said that in the early years of the Republic of China, Zhao Chida, a teenager from Dachikan Village in Doumen, went to Manila, the Philippines in Southeast Asia as a child laborer by "selling piglets". He learned from a fellow villager from Guangdong who was good at making "barbecued pork" and started making roast meat and running a restaurant. After a few years of learning, he set up his own business. While inheriting traditional skills, he also created a unique sauce formula and processing technology and established his own brand. He mainly sells barbecued pork rice, barbecued pork buns, and barbecued pork crisps, and also takes out barbecued pork and spare ribs, which is well-known among the Chinese in Manila. Later, Zhao Chida returned to his hometown after many years of absence and got married at the order of his parents. He was named "Zuo Xiu". "Zuo Xiu", a "Zhoufu guest" (locals call villagers returning from overseas "Zhoufu guests"), never returned to Manila since then, but concentrated on his barbecue business in his hometown. Zhao Zuoxiu, a "Zhoufu guest", has been famous for his barbecued pork ribs with bright color, smooth and non-greasy, crisp but not tough, salty and sweet, and with the aroma of litchi wood. He is known as the "Zhoufu guest" barbecued pork ribs. After nearly a century, to this day, the "Zhoufu guest" barbecued pork ribs secret recipe sauce, pickling process, construction of ovens, fruit wood grilling and other handicrafts have been passed down to -. In recent years, with the continuous expansion of foreign exchanges, diners from all over the world have a special liking for this traditional food and come here to taste it. In June 2015, Dachikan open fire barbecued pork ribs were included in the eighth batch of Zhuhai's intangible cultural heritage list.
