In rural Ningxia, people have the habit of eating "long noodles", which are also called "longevity noodles". People eat noodles to pray for longevity. The "long noodles" in Zhongning County, Zhongwei City, Ningxia are made in a unique way. When kneading the noodles, they should add an appropriate amount of "artemisia noodles" made from the seeds of wild plants, making the noodles soft, tender, fragrant and delicious. They are served with mutton sauce, which has a unique flavor. Artemisia noodles are made entirely by hand, and the procedures from materials, kneading, rolling, cutting, frying sauce to making soup are all meticulous. According to historical records, when Zhu Zhan, the sixteenth son of Zhu Yuanzhang in the Ming Dynasty, was an official in Ningxia, some of his relatives and neighbors also moved to Ningxia and later settled in Enhe Town, Zhongning. The relatives and neighbors who moved here were mainly surnamed Zhu and Wan. Among them, several were retired imperial chefs in the palace. They passed on the production technology of artemisia seed noodles to the locals, and since then, artemisia seed noodles have been circulated in Zhongning. The method of making Weining Artemisia noodle is: use the best white flour, add the right amount of Artemisia noodle and salt, mix with water, and knead repeatedly until it is soft and tough. Then, use a long rolling pin to roll it into a round dough sheet on the chopping board as thin as possible. After it is slightly cooled and hardened, roll it up with a rolling pin, then fold it back and forth into a shape that is narrow at the top and wide at the bottom, and then use a thin and sharp kitchen knife to cut it into thin noodles, the thinner the better. The way to eat Weining Artemisia noodle is: first make sour soup, stir-fry the meat sauce, and then cook the thin noodles in a pot. Put it in a basin of cold boiled water for a while to rinse off the sticky smell on the long noodles, then pick it up with chopsticks into a bowl, pour sour soup and meat sauce on it and it can be eaten. The Weining-style Artemisia noodle made by the above method tastes fresh and refreshing. Therefore, in the Weining Plain, there are long noodle snack stalls everywhere in every market, which are very popular. For this reason, a ballad praising long noodles has been circulating in this area for hundreds of years: "Long-necked geese, pulling red lines, all the way to Zhongning County. The girls in Zhongning roll good long noodles, roll them thinly, cut them finely, lift them up, and put them into the pot with a line, and then scoop them into the bowl like silk threads. One bowl for dad, one bowl for mom, and one bowl for the son-in-law." In rural areas, during festivals, happy events, and holidays, distinguished guests and distant guests like to eat a meal of long noodles. Foreign guests praised Zhongning's long noodles. In 2021, Zhongning Artemisia noodle making skills were officially included in the "Fifth Batch of National Intangible Cultural Heritage Representative Project List". Nowadays, every Spring Festival, a bowl of Artemisia noodles is indispensable on the local people's table.
