Manchu New Year Pig Dishes Project Batch: Provincial 2nd Batch Project Protection Unit: Mudanjiang People's Art Museum Representative Inheritor: Meng Zhaofa New Year Pig Dishes, commonly known as "Pig Killing Dishes". Ningguta's Pig Killing Dishes originated from the Ningguta Manchu settlement area. The Manchus like to eat pork, and the winter is long and cold, so the Manchus learned to pickle sauerkraut and store vegetables, and gradually formed the Ningguta New Year Pig Dishes with ethnic characteristics. The initial form was a village banquet with a single variety. Due to environmental limitations, most of them were eaten before the Spring Festival, so they were called "New Year Pig Dishes". After development, New Year Pig Dishes have become more and more abundant. In addition to the Manchu-style table-pressing dishes, they have developed into supporting banquets, including hot and cold dishes, stews, bowl dishes, etc. Among them, bowl dishes can be matched with a variety of vegetables, soy products, etc., becoming one of the unique banquet types. The basic production process is: slaughtering, filling blood sausage, braised square meat, stewing, steaming bowls, seasoning preparation, etc. (No pictures yet, welcome to provide.)
