Long noodles are a must-have for women in Ningbo. The long noodles from Lugang Village, Gaoqiao Town, Yinzhou, are a famous specialty of Ningbo. After the noodles are kneaded, they are hung on a rack and pulled to about 6 feet long with chopsticks. Generally, two chopsticks form a bundle, which is called a twist. The production process of long noodles is very particular. Refined white flour, vegetable oil, salt and other ingredients are used for pure hand-made production. After kneading flour, steaming in a jar, cutting thick strips, rolling thin strips, swishing in a jar, using chopsticks, steaming in a box, putting on a shelf, stretching, dividing noodles, drying noodles, collecting noodles and barreling, they are thin, white, tough and smooth, with a good taste and are very easy to digest. In Ningbo customs, when a child is born in a family, long noodles are distributed to neighbors. Bowls are served and held in a barrel plate (a wooden red round plate, larger than a washbasin, one of the must-have dowries for Ningbo women in the old days) and distributed door to door. Some even distribute them to the whole village. Ningbo elders eat longevity noodles for birthdays, and long noodles are indispensable. This kind of noodles is often made to order, and the family will take special care of the noodle maker, which is used for "making a living". The noodle maker will make the noodles particularly long. The family twists the longevity noodles and distributes them to the neighbors.
