Cooking Techniques of Qindong Old Goose
The cooking technique of Qindong old goose is a traditional skill project in the fifth batch of representative projects of municipal intangible cultural heritage. It started in 1857. Tang's crispy candy needs to go through 11 processes, including ingredients, selection, frying, sugar melting, shredding, stretching, pressing, cutting, drying, drying, and packaging. Each step needs to be carefully crafted. Every crispy candy needs to be strictly controlled from appearance, smell to taste. It tastes crispy and sweet, and is praised as "chewing a square of candy, swallowing it will make you feel refreshed, chewing it carefully will make you feel the sweetness of osmanthus, and the sweetness will leave you with a numbing fragrance."
