Yam, also known as sweet potato, has a long history of cultivation in Jiangnan. According to research, it has a history of at least 400 years. The production technique of vermicelli was naturally generated with the cultivation and consumption of yam, and its origin is still lacking clear written records. Xu Zongmian, a scholar in the Qing Dynasty, wrote a poem: "How can the firewood be as big as pearls, and the vines are still left with no vegetables. The firewood is full like harvesting millet, and the vines are pulling out the fruit and Pu Lu. Turn the spoon and grind the snow into powder, cut the jade fragrance and bamboo shoots into the kitchen. The wind and rain are harmonious and the battlefield is opened, and the green grass grows in the eastern corner of the sea." This is a praise for the method of eating yam. In the Maoshan area of Jintan, the historical records and folk memories of making yam vermicelli are at least 100 years old, and the skills have been widely inherited and evolved to this day, becoming one of the main grains and side dishes for people. In the late Qing Dynasty and the early Republic of China, Wang Hongsheng (born in 1908) from Shangruan Village on the southern foot of Maoshan made a living with his family by planting yam and engaged in the production of yam starch and vermicelli, which was later passed on to his stepson Su Shanhe. In the 1980s, Su Shanhe passed on the skills to his son Su Runchu. So far, the production skills have been passed down in the Su family for three generations, and he has become the most representative inheritor of the local yam vermicelli production skills. Maoshan yam vermicelli produced according to traditional skills is a famous green ecological product. After being made into catering food, it tastes delicious and pleasant, is very nutritious, and has a wide range of practical value and market consumption prospects. The current main inheritor, Su Runchu, adheres to the traditional craftsmanship of Maoshan yam vermicelli production. In 1991, he successively opened the "Jintan Xuebu Suyang Starch Factory" and "Changzhou Jintan Fengrun Starch Co., Ltd." and established the Jintan Maoyuan Potato Industry Professional Cooperative, leading the villagers to professionally engage in the production and market sales of yam vermicelli. Now it produces more than 200 tons of yam vermicelli finished products annually, and also produces and sells nearly 1,000 tons of wet powder annually, becoming the largest yam vermicelli production base in southern Jiangsu. At the same time, it has formed production and sales cooperation with large cultural and tourism units such as Oriental Salt Lake City, No. 1 Farm, and Maoshan Bamboo Sea. Maoshan yam vermicelli, produced and sold by Su Runchu according to traditional techniques, has won the "First Changzhou Good Rice and Good Grain Evaluation Quality Product Award", "Jiangsu Consumer Trustworthy Product", "Jiangsu Famous and High-quality Product", "11th Jiangsu Agricultural Cooperative Product Fair Best-selling Product Award" and other honorary titles. The production skills of Maoshan yam vermicelli have been passed down from generation to generation, with a deep folk foundation and rich cultural connotations. It is a living fossil of Jiangnan farming culture and food culture, and provides valuable information for the study of the development history of Jiangnan farming culture and folk food culture.
