Ginger sugar paste originated in the early Tang Dynasty. It is said that it was invented by the King of Medicine Sun Simiao and has been passed down for more than 1,300 years. Huaijiang is a specialty of Boai County, Huaiqing Prefecture, Henan Province. In the late Qing Dynasty, farmers Zhang Yunshan and his wife Lei Shaozhen from Boai County, Huaiqing Prefecture, Henan Province, fled to the southern foot of Huifeng Mountain in Liyang to avoid the flooding of the Yellow River. There was a lot of cold and dampness in the mountains. Lei Shaozhen used the ancestral Huaijiang sugar paste skills to make finished products. He not only prepared them for his children and grandchildren, but also gave them to local villagers to get rid of colds, coughs, colds and dampness. Zhang's Huaijiang sugar paste is mainly made of Huaijiang, brown sugar and honey. Huaijiang is taken from the special ginger produced in Boai County, Henan Province. Huaijiang cultivation has a history of more than 1,600 years. Huaijiang is spicy and filamentous, and has the effects of cold resistance, stomach strengthening, sweating and disease elimination. It is recorded in "Huaiqing Prefecture Records" and Li Shizhen's "Compendium of Materia Medica". Brown sugar is made with an ancient recipe, and honey is made from wild bees in Caoshan, Liyang. The Zhang family's Huaijiang sugar paste making skills have been passed down for six generations. In 2016, Zhang Daofu inherited his ancestors' Huaijiang sugar paste skills, registered the "Boai Nuannuan" trademark, and obtained a health license, business license, and food and drug license to legally enter the market. Today, Huaijiang sugar paste has gone out of the mountains with the help of e-commerce platforms and is sold all over the country.
