Steep pot rice cake making technique
The making technique of steep pot rice cake is a traditional skill item in the fourth batch of representative items of Nantong's municipal intangible cultural heritage. Rice cake is a home-cooked pastry in northern Jiangsu, especially in the Lixiahe area. It has become a means of supporting a family due to its low cost and small investment, and has also become a profession for the poor in the towns and cities in this area to make a living. The tools used to make rice cakes are mostly flat pots sold in pot-mat shops. The steep pot (referring to the rice pot of 1 foot 6 or more for ordinary household use) is arc-shaped, and the production requirements are unique and the craftsmanship requirements are quite high. The quality of the finished product is completely different from that of flat pot rice cakes. In the past, there were only two companies in Hai'an County that operated this pastry. The second one was more famous for the successor Zhou Wenyu (deceased), but Zhou's initial opening was later than the ancestor of the surname Cong. He created the steep pot rice cake in Hai'an for nearly a year. Until after the new millennium, the descendants of these two steep pot rice cakes were still operating this industry in Hai'an.
