The earliest record of Chaoshan people drinking tea can be found in the fragment of the inscription on the cliff on Jinshan Mountain in Chaozhou in the fifth year of Dazhong Xiangfu in the Northern Song Dynasty (1012), "Tea stove niche is flat" (tea stove is a small stove for cooking tea); there is a poem in rhyme "Sending off the Juren" written by Zhang Kui of the Song Dynasty and Xu Zhang, which says: "Silver hook and strong pen wield Yan's calligraphy, Yanlan Huanbo (another name for wine) calls Laonu (a joking name for tea)" (see "Collection of Chaozhou Sanyang Atlas", Volume 4) as evidence. Relevant data show that Chaoshan Gongfu tea should have emerged in the Ming Dynasty. In the Qing Dynasty, the cooking of Chaoshan Gongfu tea was perfected. It is recorded in the book "Chaojia Fengyue Ji Gongfu Tea" by Yu Jiao of the Qing Dynasty; it is also recorded in the "Customs Chapter of Longxi County Chronicles" in Fujian in the 27th year of Qianlong in the Qing Dynasty (1762). After the mid-Qing Dynasty, Chaoshan Gongfu tea has become a custom in Chaoshan area, and even spread to surrounding areas and Southeast Asia. The procedures of Chaoshan Gongfu tea mainly include selecting tea, water, utensils, and brewing. The brewing methods are: preparing utensils, adding tea, waiting for soup, brewing tea, scraping foam, pouring tea in the pot, scalding the cup, and sprinkling tea. After the eight methods are performed, the next step is to taste the tea. First, smell its fragrance, sip it gently, sniff the bottom of the cup three times, and smell the auspicious atmosphere. In addition to its unique brewing method, its outstanding feature is that it uses "oolong" tea (semi-fermented tea) as the main tea material. Drinking Gongfu tea is not restricted by the environment and has various forms, such as drinking alone, drinking with friends, or drinking in groups of three or five. It has historical and cultural, aesthetic, social, family cultural, fitness and intelligence values. Gongfu tea, as a cultural phenomenon, is an important part of Chaoshan traditional culture. Now, the fast pace of social life has gradually replaced the traditional Chaoshan Gongfu tea art with simplified brewing procedures. There are many drinkers, but few who know its way, and its situation is endangered. Chaoshan Gongfu tea, as a regional culture, is worthy of protection.
