The traditional brewing techniques of Gulin Langjiu originated from Erlang Town, Gulin County, southern Sichuan. Relying on the Erlang Ancient Town with a history of more than 400 years and the brewing techniques inherited for hundreds of years, it has gradually taken shape, matured and developed. In 2008, it was selected into the second batch of China's national intangible cultural heritage protection list. The authentic origin of Gulin Langjiu is Erlangtan Town, Gulin County. This town is located in the middle reaches of the Chishui River and is surrounded by mountains. There is a clear spring flowing out in the deep valley of these mountains. The spring water is clear and sweet. People call it "Langquan". Because the water of Langquan is used to make wine, it is named "Langjiu". Gulin Langjiu has a brewing history of more than 100 years. According to relevant records, in the late Qing Dynasty, local people found that Langquan water was suitable for brewing wine, and began to brew Xiaoqu wine and Xianghua wine with Xiaoqu for local residents to drink. In 1932, Xiaoqu was changed to Daqu for brewing wine, named "Sisha Langjiu", and the wine quality was particularly good. Since then, Langjiu has become more and more famous and well-known. Gulin Langjiu inherits and carries forward the traditional craftsmanship in the brewing process, adopts two batches of feeding, repeated fermentation and distillation, seven times of wine extraction, and a production cycle of 9 months. After each wine extraction, it is stored in batches and quality, sealed in a sealed jar, and sent to a natural cave. After 3 years, the wine is sweet, and then the wine is blended and seasoned. After quality inspection, it is ready. Gulin Langjiu is a typical representative of Maotai-flavor liquor. It was evaluated by Mr. Zhou Henggang, a Chinese brewing expert, as "among the various complex aromas of Langjiu, its Maotai, caramel, ester and mellow aromas are extremely coordinated, and it is like adding one point to make it long, and reducing one point to make it short", and it is deeply loved by consumers at home and abroad for its unique taste characteristics of "prominent Maotai aroma, mellow and clean, elegant and delicate, long aftertaste, and long-lasting aroma in the empty cup".
