Wuzhou Juyan is produced in the area of Shuanglong Cave on the top of Beishan Mountain in Jinhua City, Zhejiang Province. It is named because Jinhua was called "Wuzhou" during the Sui and Tang Dynasties. The production of Wuzhou Juyan tea began in the Tang Dynasty, flourished in the Song Dynasty, and prospered in the Ming and Qing Dynasties. It was one of the top ten teas during the Tang and Five Dynasties, and became a tribute to the royal family during the Ming and Qing Dynasties. Wuzhou Juyan tea mostly grows in rock crevices or on hill slopes. It is generally picked when the tea has one bud and one leaf or one bud and two leaves from Qingming to Guyu. It takes about 60,000 buds and leaves to stir-fry 1,000 grams of dry tea. Juyan tea leaves are fine, tight, slightly flat, with a slight fuzz; the color is silver and green, and the fragrance is long-lasting; when brewing, the soup color is bright green, and the bottom of the leaves is green and uniform; it is fresh, mellow, sweet, and refreshing. The production technique of Wuzhou Juyan mainly consists of 7 processes: picking grass and spreading green, green pot, rolling, two pots, making blanks, baking, and selecting and storing. Baking is the main method of frying, and the combination of frying and baking forms a unique process. Wuzhou Juyan tea has a strong flavor, sweet nature, and rich nutrition. It contains tea tannins, proteins and other substances that are beneficial to the human body. Among them, the content of tea polyphenols, , and amino acids is extremely high. This tea has high medicinal value, which is recorded in the "Supplement to Materia Medica" in the Tang Dynasty, the "Tea Fu" in the Song Dynasty, and the "Compendium of Materia Medica" by Li Shizhen in the Ming Dynasty. At present, the raw materials of Wuzhou Juyan are in short supply, the area of the tea garden is less than 100 acres, and the surrounding area is a national scenic spot, making it difficult to expand the planting area. At the same time, many tea-making technicians are old, and most young people are unwilling to learn this traditional handicraft. Now there are only 6 technicians who can make Juyan tea. The production skills of Wuzhou Juyan tea are facing a situation of no successors and are in urgent need of rescue and protection.
