Changli Zhaojiaguan Dumpling Making Technique
Changli Zhaojiaguan, located on Gulou East Street in Changli County, was founded in 1921. Its founder Zhao Fuyuan (1907-1996) was a famous dumpling master. Zhaojiaguan and Zhaojiaguan dumplings have experienced the prosperity of the 1940s, the heyday of the 1950s, the difficult period during the "Cultural Revolution" in the 1960s, and the revitalization period after the "Cultural Revolution". It has a history of more than 80 years. The long-renowned Zhaojiaguan dumplings are a traditional time-honored flavor food in Changli County, mainly steamed dumplings in round cages. Its characteristics are: exquisite selection of ingredients, thin skin and loose fillings, delicious taste, fragrant but not greasy, and juicy and delicious. It has formed four major series of seafood, vegetarian fillings, meat fillings, and assorted, and thirteen varieties. The general meat filling ingredients are: taking 1 jin of refined flour dumplings as an example, 6.5 liang of fresh pork, 1 liang of lard, 5 qian of sesame oil, 5 qian of dried shrimp, 5 qian of MSG, and appropriate amounts of onions, vegetables, mushrooms and various small ingredients. And often with the change of seasons, shrimp, crab meat, shrimp roe, fish bones, sea cucumbers, scallops, green clams, oysters, abalone, octopus, mantis shrimp and other seafood are mixed to make dumplings with unique flavor, which is very popular with customers. The production method is to boil the noodles with boiling water, feed the meat filling with chicken soup, and all are handmade. The quality standard is: 1 catty of flour is steamed into 70 dumplings, weighing 3.1-3.3 catties. Because Zhaojiaguan dumplings have a unique flavor and are popular in the market, the overseas edition of People's Daily, Hebei Daily, Economic Daily, Food News, etc. have reported on them, which have caused a sensation at home and abroad. In the 1950s, Zhao Fuyuan participated in national and industry-specific provincial, municipal and regional performances and competitions many times, and won many awards. The former Minister of Culture Shen Yanbing and Liao Mosha have both praised him. In Tianjin, the restaurant was visited by the late President Liu Shaoqi, and they took a group photo and inscribed a plaque with the words "No. 1 in Jingdong" (which was destroyed during the Cultural Revolution). It has also received art masters such as Xun Huisheng, Shang Xiaoyun, Xi Xiaobo, and Guan Shaohua.
