Pastry making skills (Funing cake making skills), a traditional skills project in the fourth batch of representative projects of intangible cultural heritage of Jiangsu Province, was applied for by Funing County, Yancheng City, Jiangsu Province. Funing cake, also known as jade belt cake and first-class jade belt cake, is a traditional cake delicacy in Funing area. Produced in Funing County, Yancheng City, Jiangsu Province, the hometown of Chinese prose, the cake slices are as white as snow, as soft as clouds, as sweet as honey, can be rolled up and opened, and are sweet, moist, soft, nutritious, and suitable for both young and old. Funing cake is very delicious, mainly made of glutinous rice flour. During the reign of Emperor Qianlong of the Qing Dynasty, Emperor Qianlong toured the south of the Yangtze River and stayed in Huai'an Prefecture. The magistrate of Funing County presented cakes to the emperor. After eating, Emperor Qianlong praised it and named it "jade belt cake". Folk food chefs summarized the experience of making cakes in the local area, selected high-quality glutinous rice, pure white sugar, freshly squeezed sesame oil and high-grade candied fruit, etc., and processed them according to their proportions. First, soak the fine glutinous rice in warm water for a day and a night, pick it up, stir-fry it in a hot pan, sieve it, make it crisp and white, and then crush it into fine powder; then put it together with washed green vegetables or saturated broad beans, and stir it all day and night to make the rice flour evenly scented with water and the dryness and wetness are appropriate. After sieving twice, mix it back and forth with the white sugar liquid stirred into a paste, and the appropriate amount of sesame oil, peanut oil, etc., put the honey core made of preserved fruits such as green plum, red and green silk, osmanthus, and green fruit in the middle, make it into a rectangular cake, heat it in warm water appropriately, put it in a cage and steam it, and warm it for a day and a night, then cut it into thin slices and package it. Its strips are complete, the edges and corners are clear, the thickness is uniform, and the size is consistent. As a special delicacy, Funing cake is sold all over the world. In Funing, the tradition of every family during the Spring Festival is still preserved for relatives and friends to enjoy (it has become a custom in the local area).
