Sangluo wine is a famous traditional wine in my country, produced in Yongji City, Shanxi Province. There are two local legends about the origin of Sangluo wine: one is that there is a Sangluo spring under the Houtu Temple in Tuguiyuan, 5 li southeast of the ancient Puzhou city. Therefore, there is a saying that "the food is hung in the year when the branches wither, and it is moved to the day when the mulberries fall". Sangluo wine is brewed with barley, peas, mung beans, sorghum and other raw materials, and green stubble Daqu made from barley, peas and mung beans is used as saccharification and fermentation agent. The process adopts steaming raw materials, steaming auxiliary materials, fermentation with clear residue, steaming and flowing wine, clearing to the end, fermentation in ground tanks, picking wine by quality, equal blending and other operation methods, and is made after evaluation, blending and packaging. The product is a fragrant Daqu wine, the wine is colorless and transparent, clear and bright, pure and fragrant, pleasant aroma, mellow body, sweet entrance, long aftertaste, strong aftertaste, and is a superior liquor with traditional fragrant style in my country. The main brands are Sangluo wine, Jin Sangluo wine, Sangluo old wine, Sangluo Wang wine, etc. Sangluo wine is brewed by the traditional "solid microbial ground tank fermentation method", contains special microbial groups, has the effect of dispelling wind and improving eyesight, smoothing qi and activating blood circulation, and provides a good example for the study of ancient brewing technology.
