Jinyuwan Liquor, produced by Jinyuwan Liquor Industry, is one of the most representative specialties of Jieshou. Its brewing technique originated in the Northern Song Dynasty, and was gradually improved and matured from the Ming and Qing Dynasties to the Republic of China. It was protected and carried forward after the founding of the People's Republic of China, forming a unique process of "three cleanings, two controls and one continuation" (steaming of auxiliary materials, steaming of raw materials, steaming of fermented mash, controlling the acidity of mash, controlling the water of mash, and continuing fermentation of mash), with the distinctive characteristics of "four highs and one low" (high accumulation starch, high accumulation temperature, high water content in the pool, high temperature moistening of materials, and low temperature in the pool). In the Song Dynasty, Jieshou had historical documents recording that "various towns were placed in places with dense populations under their jurisdiction, and supervisory towns were set up to manage fire bans or liquor taxes". Since the Qing Dynasty, Jieshou's brewing industry has become increasingly prosperous, and there are private mash shops such as the most famous Shuanghe Zaofang and Jinyu Zaofang. The predecessor of Jinyuwan Liquor Industry was Jinyu Zaofang, which was located in the east of Jiegouji in the late Qing Dynasty. The brewing technique of Jinyuwan wine has distinct local characteristics. It has always used the old five-steamer brewing technique in the Central Plains. It has been passed down by three generations of descendants, Duan Xueyu, Duan Weishen, and Duan Zhaofa. It is combined with local soil, water patterns, climate, cellars and other conditions, and is determined by taste. Through the main processes of hand-made koji, layered cellaring, stem drying, rice husk steaming, mixed steaming with continued dregs, double-wheel fermentation, picking wine according to flowers, etc., it finally formed a brewing technique with unique Jinyuwan characteristics.
