Zui Sanqiu Liquor produced by Golden Seed Group is a specialty of Fuyang. Its brewing technique originated in the Wei and Jin Dynasties. In the Song and Yuan Dynasties, its fermentation and koji making process began to be combined with distillation technology. It was improved from the Ming and Qing Dynasties to the Republic of China, and matured and finalized. After the founding of the People's Republic of China, it was protected and carried forward, forming a unique process of "one control, three purifications and one matching" (control of pulp and water reduction, steaming of auxiliary materials, steaming of raw materials, steaming of fermented mash, and fermentation of dregs), with the distinctive characteristics of "four highs and one medium" (high water temperature for moistening materials, high accumulation of starch, high accumulation temperature, high water content in the pool, and medium temperature in the pool). The name of Zui Sanqiu Liquor originated from the story of "Liu Ling was drunk for three autumns" in 265 AD. According to legend, during the Wei and Jin Dynasties, Du Kang, a master of winemaking (some people have verified that he was "Du Lin", a descendant of the ancient master of winemaking Du Kang, or "Du Yong"), opened a winemaking workshop on the bank of Yingshui River, named "Du Kang Jiu Lin". One day, Liu Ling, one of the "Seven Sages of the Bamboo Grove", drank three bowls of "Du Kang Jiu Lin" wine in this shop to show off his ability. After being "drunk for three years", he woke up from his grave and shouted: "Good wine, good wine". The predecessor of Anhui Golden Seed Group was Fuyang County Winery established in July 1949. It is a time-honored enterprise that inherits the "Dasheng Wine Shop" of Shanxi merchants in the Ming Dynasty and the "Yuntai Wine Shop" of Shanxi merchants in the Republic of China. Located on the bank of Yinghe River, a tributary of the Huaihe River, it has unique hydrological and geological conditions. It is the birthplace of Huizhou wine and Henan wine in the Central Plains and has been a famous wine town since ancient times. Today, the "Drunk Three Autumns" produced by Golden Seed Group is very popular. The five major brands of liquor, including "Golden Seed", "Seed", "Yingzhou Fine Wine" and "Hetai", are all brewed using the traditional Zuisanqiu technology and are national geographical indication protected products. Zuisanqiu liquor was awarded the National Light Industry Ministry's Excellent Product in 1987, and the "Zuisanqiu" trademark was recognized as a "Well-known Chinese Trademark" by the Trademark Office of the State Administration for Industry and Commerce. The traditional brewing technique of Zuisanqiu liquor is a typical example of my country's brewing technology and wine culture, and is a precious intangible cultural heritage of China's wine industry. The Golden Seed Group Brewing Branch still preserves the ancient wine cellars from the Ming and Qing Dynasties, and has been identified as a "provincial cultural relic protection unit" by the People's Government of Anhui Province. Protecting and inheriting the traditional brewing technique of Zuisanqiu has extremely high scientific research value, economic development value and historical and cultural value.
